When an employer does a employment verification. Can they see jobs not listed on resume?

I am applying for work but don’t want to include some jobs. If they do an employment verification are they going to see those I left off?

They can see any employer which has paid you a paycheck that has had federal income tax taken out of it. In other words, yes, they can see jobs not listed on a resume, but luckily for you, most jobs don’t dig that deeply into a candidate unless the job is highly competitive. Also, many people only list jobs on an application that apply directly to the work that they will be doing in the new job, so you can leave jobs out of an application or a resume, but if the job really really really wanted your entire employment history (not that likely), they could find it if they wanted.
