Most companies assume that if you are looking for a new job and you currently have one than it is confidential. You should not have to tell them that you would prefer them not to contact your present employer.

I have never heard of a company contacting your present employer before interviewing and during the interview they should ask you if they can contact your present employer.

I don’t think you should have to worry about anything because most companies are aware that contacting a present employee is a no no. I have interviewed for several jobs while still with a company and this has never been a problem.

Just make sure you some good references to back you up

I have interviewed literally thousands of people through various jobs in my life. I used to ask if it was OK to contact their employer.

If they aren’t asking you, just be forward and let them know that you are looking for something that offers you more than your current position, but until you find something you can’t afford to jeopardize your livelihood. They should understand….

Uhm, yeah. Otherwise they will call your employer to see if you work there. Then the gig is up.
Yes it is perfectly normal to let them know not to contact your present work. There is nothing wrong with that.
How to word that? Usually it is indicated on your application but you might say something like:
“Also, I’d appreciate it if you did not contact my present employer at this time.”
Put that at the end of your email.
